Old Fashion Coconut Cake
| 1 Duncan Hines Butter cake mix |
1 stick margarine |
| 4 eggs, separated |
4 egg whites, beaten stiff |
| 2 1/4 cups sugar |
3/4 cup water |
| 1 tsp. vanilla |
1 can Bakers coconut |
Preparation:
Beat cake mix, margarine and eggs. Bake in layers.
Icing:
Boil sugar and water, cook to string stage. Meanwhile, beat egg whites in
mixer. Pour hot syrup over egg white in a slow steady stream.
Continue to beat 3 - 5 minutes; add vanilla. Spread on cake layers and
sprinkle with coconut.
